Ever since I remember, the Hyderabadi biryani is always prepared with great pain for any special celebration. Now I prepare such dishes myself (I work for a Midlands catering company). Biryani comes from the Persian word ‘birian’, meaning ‘fried before cooking’. The most typical Indian biryani evolved with the Nawabs of Awadh. Just the mention of the word ‘biryani’ brings to mind the fresh aroma of meat and spices being cooked in rice. My mouth still waters at the very mention of the word. We would wait for the much royal biryani to be placed on the table before gorging on it. This royal dish could easily pass as the center piece at the dining table. This dish is accompanied with a very colorful salad and kheer which is a delicacy in itself. The meal itself is fit for a king and you dream of it much after the meal, as the taste continues to linger in your mouth. So all of you out there who haven’t tasted this need to list this on your “to eat” list!
